Berry Pistachio Chicken Salad (Paleo, whole 30)

This berry pistachio chicken salad is delicious while being paleo, whole 30 and healthy! The perfect blend of flavours.

This salad is not only nutritious but delicious too. Full of leafy greens which provide tons of micronutrients as well as mint which is great for digestion. You’ll love the blueberries in this because they aren’t too sweet and add a lot of flavour. Blueberries are chalked full of powerful antioxidants and one of the best foods you can eat for your brain as they are linked to memory and cognitive performance. The pistachios are also great for digestion and add a dose of healthy fats that help keep the blood sugar stable.

Berry Pistachio Chicken Salad
Servings: 1
Ingredients
  • 2 cups mixed greens
  • 4 oz chicken, cooked
  • 1/4 cup blueberries
  • 1 tbsp pistachios
  • 1 tbsp fresh mint
Instructions
  1. Combine everything into a bowl and add your fav dressing!

Here is the recipe for the granola: - 1 1/2 cup nuts and seeds (I used almonds, cashews, pecans and pumpkin seeds).
- 1/2 cup shredded coconut.
- 1 tbsp maple syrup.
- 1 tbsp blackstrap molasses.
- 1 tsp cinnamon.
- 1/4 tsp nutmeg. - 1/4 tsp ground ginger.
- 1/4 tsp cardamom.
Bake at 350F 25 minutes.
