What I love about this healthy cauliflower oatmeal recipe is that the flavor and topping possibilities are endless. Plus, you get to sneak some veggies in. Cauliflower is such a versatile vegetable and has numerous health benefits for you too.

Healthy Cauliflower Oatmeal
Servings: 3
Ingredients
Base
4 cups cauliflower rice
1 can coconut milk
2 tsp vanilla
2 tbsp ground flaxseed
3 scoops collagen optional
Blueberry Cinnamon
1 tbsp sunflower seed butter
1/4 tsp chia seeds
dash cinnamon
Chocolate Almond Butter
1 tbsp cacao
1 tbsp almond butter
1 tbsp dairy free chocolate chips
Matcha
1 tsp matcha
1 tbsp coconut butter
1 tsp hemp seeds
Instructions
Cauliflower Oatmeal Base
Heat a pan to medium heat.
Add in cauliflower rice, coconut milk, vanilla, ground flaxseed and collagen.
Cook until cauliflower rice is tender and liquid is absorbed. Stirring every so often. If you like your oatmeal more liquidy feel free to add more milk.
Add in your fixings for the flavour you want. Each one is per serving, so if you want the full recipe that flavour multiply by 3.
