We all love recipes that are quick, easy and healthy. And these blueberry muffin overnight oats are the perfect combo of all three. You basically wake up to a delicious breakfast, what a great way to start the day, am I right?
When I was younger I use to love blueberry muffins. In fact, I would get one every Saturday from the bakery with my mom. There is just something nostalgic about blueberry muffins for me. It’s been a while since I have had overnight oatmeal, and a lot longer since I have had a blueberry muffin. So I decided to bring the two together, and boy am I glad that I did, these blueberry muffin overnight oats are worth getting out of bed for.
What You’ll Need
Oats. These guys help to lower cholesterol because they have a type of soluble fiber called beta-glucans. This fiber also makes them filling too! Further, beta-glucans help to boost the immune system by activating macrophages (the guys that fight fungus, bacteria and toxins). I also love that they are low in glycemic index meaning they will prevent blood sugar spikes.
Blueberries. High in Vitamin K, C and Manganese blueberries are full of benefits for your whole body. They are also full of phenol, specifically gallic acid, that acts as a neuroprotective agent and help to boost focus and memory. They also help to support digestion by helping to balance gut bacteria.
Chia Seeds. I’m so crazy for chia seeds, I throw them into so many things because these small guys pack a punch. Find out all about them here.
Lemon Zest. The peel actually has 10 times more vitamins than the juice itself! Think vitamin C, vitamin A, folate, magnesium and more. The zest also helps to lower the bad type of cholesterol and minimizes the risk of developing heart disease.
I love the combo of the lemon zest with the blueberries, I feel like it elevates the flavour. A game changer is also the granola I topped it with. That little bit of crunch is so satisfying and reminds me of the crumble that comes on top of blueberry muffins.
Blueberry Muffin Overnight Oats

Ingredients
1/2 cup oats
1/4 cup blueberries
1 tbsp chia seeds
splash vanilla extract
1 tsp honey
1/2 tsp lemon zest
6 tbsp almond milk
2 tbsp Granola to top
Instructions
Add oats to a mason jar or container.
Mash blueberries with fork and add to jar.
Add in chia seeds, vanilla, honey, lemon zest and almond milk.
Stir everything together.
Refrigerate overnight.
Top with granola and more blueberries in the morning or when ready to eat.
