We all need some comfort food sometimes. And for me, classic chocolate chip cookies come to mind. There is just something about the smell of chocolate chip cookies, and eating them with a glass of almond milk. But, they can often be loaded with refined sugar and unhealthy fats…but that wasn’t going to stop me…
So, low and behold my new favorite chocolate chip cookie recipe. It’s gluten free, dairy free, vegan, paleo, and soy free (and you can use a flax egg replacement if you’d like to make it egg free). Which means that pretty much anyone with food allergies or intolerances can enjoy these!
Chocolate Chip Cookies (Gluten Free & Paleo)

Servings: 6 cookies
Ingredients
1 cup almond butter
1 egg (or flax egg: 1 tbs ground flax with 3 tbs water)
1/4 cup maple syrup
1 scoop vital proteins collagen peptides (optional)
1/4 cup dairy free chocolate chips
Instructions
Start by whisking together the almond butter, egg (or flax egg) and maple syrup until combined.
Add in the scoop of Vital Proteins Collagen Peptides
Fold in dairy free chocolate chips until combined.
Bake at 350F for 8-10 minutes or until edges are golden brown.
Allow to cool for a few minutes (I know this is the hard part) and enjoy!
