Today I am bringing you one of my favorite recipes, Coconut Vanilla Rawnola. I love this because it is easy, quick and basically tastes like cookie dough. Most importantly it’s healthy! Very high in fiber because of the dates and the oats, so it really is a win.

Total Time: 10 Minutes
Ingredients
10-14 pitted Medjool dates
3/4 cup rolled oats
1 tsp vanilla extract
¼ cup unsweetened coconut
Directions
Add oats, coconut, and half of the dates to a food processor
Add remaining dates one or two at a time until you get chunky, crumbly cookie texture
Place in resealable container and store in the fridge
Once you have made your coconut vanilla rawnola, it can be stored in the refrigerator for up to a week (though I doubt it will last that long!). Take it out whenever you need a quick snack or want to add a little fun to your meal!
