These healthy apple cinnamon muffins are the perfect healthy breakfast or snack. Loaded with healthy fats and fiber, they not only taste great but are great for your blood sugar and gut health! They taste great on their own but are also delicious with a spread of your favorite nut butter. I love topping mine with a few pumpkin seeds which are loaded with zinc, making it great in supporting your immune system during the cooler months.

Healthy Apple Cinnamon Muffins (Paleo)
Servings: 6
Ingredients
2 eggs
2 tbsp maple syrup
3 tbsp coconut oil
2 tbsp almond milk
1 1/2 cup almond flour
1/2 cup arrowroot flour
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp apple spice (or cinnamon)
1 apple
Instructions
Preheat oven to 350F.
Combine eggs, maple syrup, coconut oil and almond milk in a bowl with a whisk.
In a separate bowl combine almond flour, arrowroot flour, baking powder, baking soda and apple spice.
Cut your apple into small cubes and set aside.
Add the wet ingredients to the dry and mix until just combined.
Fold in apple chunks.
Separate into 6 muffin tins.
Top with seeds or nuts (optional)
Bake for 20-25 minutes or until toothpick comes out clean.
Allow to cool for 5-10 minutes.
Store at room temperature or freeze.
