This healthy lava cake is so moist and delicious, has only 6 ingredients and is paleo, gluten-free and refined sugar-free. Get ready for ooey gooey goodness!
What I love about this recipe is the warm chocolate center. It is perfectly molten and has just the right about of sweetness. Plus, it is super easy to make while being a showstopper.
The key to making healthy lava cakes is the bake time. You can’t overcook these or the center will harden, and you don’t want to undercook it because you want the outside to be set. I suggest keeping an eye on these when you bake them because every oven can be different, but once you find that sweet spot, oh my!
Healthy Molten Lava Cakes (Paleo, Refined Sugar Free)
Servings: 2
Ingredients
4 oz dairy free chocolate chips
2 tbsp coconut oil
1 tbsp maple syrup
1 egg (plus 1 egg yolk)
1 tbsp ground flax
1 tbsp cacao
pinch himalayan salt (optional)
Instructions
Preheat oven to 350F.
Melt chocolate and coconut oil in a double boiler or in 30-second increments in the microwave.
Combine with the maple syrup, egg and egg yolk, ground flax and cacao.
Stir until just combined. Do not overmix.
Separate batter into two small ramekins.
Add a pinch of Himalayan salt to the top if desired.
Bake for 15 minutes until the edges are set but the center is soft. Let stand 2-3 minutes before serving.
