Healthy Nachos Two Ways!

Whose doesn't love a good nacho platter?! Hands down one of the best comfort foods around. So I am more than happy to announce this not only healthy but versatile recipe for heathy nachos! Servings: 1-2 servings


Ingredients:

Cauliflower Nachos

  • 2 cups cauliflower florets

  • 1/4 tsp garlic powder

  • 1/4 tsp cumin

  • 1/4 tsp paprika

  • 1/4 tsp salt

Toppings:

  • 1/4 cup dairy free cheese

  • 1/4 cup tomato

  • 2 tbsp red onion

  • 2 tbsp cilantro

  • 1/2 avocado

Ground Meat:

  • 1/2 lb grass fed ground meat

  • 1/4 tsp garlic powder

  • 1/4 tsp cumin

  • 1/4 tsp paprika

  • 1/4 tsp salt

Lime Crema:

  • 3 tbsp dairy free yogurt

  • juice 1/2 lime


Instructions: 

  1. Preheat your oven to 425F

  2. Start by washing and cutting up your cauliflower into flat chip like shapes and place them in a bowl

  3. Drizzle the cauliflower in the oil of your choice and add in your salt, smoked paprika, chilli powder and cumin - toss.

  4. Place on baking sheet and bake for 20 minutes

  5. Brown your ground beef with the spice blend and oil of your choice

  6. Create your lime crema mixing together dairy-free yogurt and lime juice.

  7. Dice up your onion, tomato and avocado.

  8. Top the cauliflower (or chips) with the cooked meet, dairy free cheese and place in oven for 8 minutes.

  9. Add the rest of your toppings to the platter

  10. Enjoy!
