This healthy pumpkin porridge is the perfect cozy breakfast for when the weather gets a little chilly. Not only is it paleo and vegan, but also full of protein and healthy fats to keep you full and your blood sugar stable. Top it with your favorite nuts, a dollop of yogurt, or nut milk. It is also meal prep friendly- just store it in the fridge.
Ingredients:
1/4 cup almond flour
1 tbsp ground flax
1 tbsp nut butter
1/4 tsp vanilla
1/2 cup almond milk
3 tbsp pumpkin
1/4 tsp pumpkin spice
Instructions:
Heat a pan to medium heat.
Add all of your ingredients and stir until combined.
Cook 5-7 minutes or until it has thickened
