When it is cold outside coming inside to something warm and comforting can be oh so good. Especially if that something is dairy free mac and cheese. This recipe is simple to make and still gives you that stick to your ribs goodness of traditional mac and cheese. Enter dairy free mac and cheese.
What You’ll Need
Chickpea pasta. I love this because it adds a healthy dose of protein to the dish. Protein will help keep you full!
Olive Oil. Provides a source of healthy fats and is great for digestion.
Brown Rice Flour. Full of fiber and great in stabilizing blood sugar.
Almond Milk. Loaded with vitamin E and adds a wonderful nutty flavour to the dish.
Nutritional Yeast. This stuff has all 18 amino acids and in addition, is full of vitamin B12 and folic acid.
Garlic Powder. Boosts the immune system and also aids in digestion.
Ingredients
1 cup chickpea pasta
1 tbsp olive oil
1 tbsp brown rice flour
1/2 cup almond milk
1/2 cup nutritional yeast
1/2 tsp garlic powder
Instructions
Bring water to boil in a pot and cook chickpea pasta according to directions.
Add olive oil and flour to pot and whisk over medium heat.
Add in almond milk and whisk until smooth (will thicken).
Add in nutritional yeast and garlic powder and whisk until smooth.
