What I love about this healthy cauliflower oatmeal recipe is that the flavor and topping possibilities are endless. Plus, you get to sneak some veggies in. Cauliflower is such a versatile vegetable and has numerous health benefits for you too.
Benefits of Cauliflower
Rich in Choline.
Choline is great for learning and memory.
Loaded with beta-carotene, quercetin and rutin.
These help to defend against reactive oxygen species which can be damaging to health.
Fiber helps to regulate the digestive system and keeps you full.
Rich in glucosinolates
These help to support the liver detox process, which is important to overall health.
Full of Vitamin C
Vitamin C is a great antioxidant important for immune health and the formation of collagen which gives you strong joints and glowing skin.
- 4 cups cauliflower rice
- 1 can coconut milk
- 2 tsp vanilla
- 2 tbsp ground flaxseed
- 3 scoops collagen optional
- 1 tbsp sunflower seed butter
- 1/4 tsp chia seeds
- dash cinnamon
- 1 tbsp cacao
- 1 tbsp almond butter
- 1 tbsp dairy free chocolate chips
- 1 tsp matcha
- 1 tbsp coconut butter
- 1 tsp hemp seeds
Heat a pan to medium heat.
Add in cauliflower rice, coconut milk, vanilla, ground flaxseed and collagen.
Cook until cauliflower rice is tender and liquid is absorbed. Stirring every so often. If you like your oatmeal more liquidy feel free to add more milk.
Add in your fixings for the flavour you want. Each one is per serving, so if you want the full recipe that flavour multiply by 3.
