The BEST Vegan Pesto recipe that is so easy to make plus is paleo, healthy and dairy-free! Enjoy with pasta, in salads, stir fry’s or as a spread.
This is the BEST vegan pesto you will ever make. It is so full of flavour, you won’t even miss that it is dairy-free. The great thing about this pesto is it is so versatile. It tastes delicious on pasta, but is also great in stir fry’s, on veggies, as a dip or as a spread.
You can store it in the fridge for up to 5 days or store it in the freezer for months. A trick I like to use is to separate it into ice cube trays and freeze them into cubes. This makes it easy to defrost a little at a time and throw into your favorite dishes.
- 4 cups fresh basil
- 1/2 cup pine nuts
- 1/4 cup extra virgin olive oil
- 1-2 cloves garlic
- pinch himalayan salt
- 1/8 tsp black pepper
Blend all ingredients until smooth.
Store in fridge for up to 5 days or freezer for months.
