Sometimes, you need a good chocolate chip cookie, or in this case double chocolate chip cookies. YUM. This cookie has all of the fudgey yumminess with none of the guilt.

This one uses aquafaba, which is the brine you get from canned chickpeas. It is crazy because it acts just like egg whites but is a great vegan alternative. Make sure you get a can that is BPA free by the way.
- 4 tbsp aquafaba or egg whites
- 1/2 tsp baking soda
- 1/4 cup coconut sugar
- 1/3 cup cocoa powder
- 1/2 cup peanut butter
- 1/2 cup chocolate chips
Whip egg whites or aquafaba on high until stiff peaks form.
Fold in the rest of the ingredients.
Bake at 350F for 10-12 minutes or until edges are set.
