Today I am sharing with you 3 of my current favorite healthy breakfast recipes that are gluten-free, paleo and delicious. Since breakfast is the first meal of the day why not nourish yourself with something that is not only delicious but good for you too.
NUT FREE PANCAKES
These nut-free pancakes are as nutritious as they are delicious. Loaded with fiber and healthy fats from the coconut flour, and perfectly fluffy, they are the perfect staple recipe. Plus, they freeze really well for a quick pop in the toaster on busy mornings.
- 3 eggs
- 2 1/2 tbsp coconut oil
- 1/4 cup coconut milk
- 1/4 cup coconut flour
- 1/4 tsp baking soda
- 1/4 tsp apple cider vinegar
Add apple cider vinegar to coconut milk and set aside to culture for 3 minutes.
Combine eggs, coconut oil, and coconut milk mixture.
Add in the coconut flour and baking soda until combined, do not overmix.
Heat a pan to medium heat with coconut oil spray and using a 1/4 cup measure spoon out the batter.
Cook until edges are set and bubbles are in the middle.
Flip and cook another 30 seconds.
Add your favorite toppings!
LOW CARB EGG BOWL
I love this low carb macro bowl because it is loaded with veggies but has great healthy fats and protein to keep you full and satisfied. Plus, there is nothing better than a runny yolk, am I right?
- 1 1/2 arugula
- 1/4 cup grape tomatoes
- 1/2 avocado
- 2 eggs
Boil some water and add 1 tbsp vinegar. This helps the eggs stay together.
Add in the eggs to the water one at a time, turn the heat down to low. Cook for 4 minutes for soft poached egg.
Add your arugula, grape tomatoes and avocado to a bowl or plate while your eggs cook.
Remove eggs from water and place on top of salad.
QUICK PALEO BREAKFAST “CEREAL”
I have good news. You can make your own paleo cereal at home with just a few ingredients. I combined come frozen fruit, hemp seeds and coconut to make a cereal style bowl that I topped with almond butter. But feel free to switch it out with what you like! You can do any type of nut or seed, fresh or frozen fruit, even freeze dried.
- 1/4 cup frozen raspberries
- 1 tsp hemp seeds
- 2 tbsp unsweetened flaked coconut
- 1 tbsp almond butter
- 1/4 cup almond milk
Combine everything into a bowl and enjoy!
