Blueberry Pancakes (Gluten Free)

Ingredients
  • 1 cup blueberries
  • 1 ripe banana
  • 3/4 cup almond milk
  • 1 1/2 cup brown rice flour
  • 2 tsp baking powder
  • 1 egg (or flax egg: 1 tbs ground flax with 3 tbs water)
  • 1 tsp cinnamon
  • pinch salt
Instructions
  1. Combine all ingredients, except blueberries, in food processor or blender.

  2. Heat pan to medium heat and spray with coconut oil.

  3. Using a 1/3 cup, spoon out batter onto heated pan. Add 5-7 blueberries to the middle.

  4. Cook 3-4 minutes or until golden on underside.

  5. Flip and cook for 1 minute.

  6. Repeat with the rest of the batter
