Start by making the chia pudding. Mix together chia seeds, coconut milk and nut milk.
Allow to thicken while you make the pumpkin portion.
Mix together pumpkin, pumpkin spice, vanilla and maple syrup.
Divide pumpkin into two mason jars.
Divide the chia pudding into the jars, you might have some leftover, save it for another day!
Top with pecans or any other desired toppings
