Healthy Pad Thai (Paleo)

Ingredients
  • 6 tbsp PB And Me
  • 1/2 cup hot water
  • 2 tbsp coconut aminos
  • 1 tbsp red or yellow curry paste
  • 1 cup butternut squash noodles
  • 3/4 cup coleslaw mix
  • 3 tbsp green onion chopped
  • 1/2 cup protein of choice (chicken, tofu)
Instructions
  1. Heat a skillet to medium heat. 

  2. Add hot water, PB2, coconut aminos and curry paste.

  3. Mix until smooth. 

  4. Add the noodles, slaw mix and green onions, cook until tender.

  5. Add in protein of choice. 

  6. Serve hot.
