Tahini Stuffed Sweet Potato

  • 1/2 sweet potato cooked
  • 1/2 cup kale
  • 1/2 cup protein of choice
  • 2 tbsp tahini
  • 1/2 lemon, juiced
  • 1 clove garlic
  1. Prep your sweet potato. Or in a pinch, you can microwave it. I like to keep them on hand to make into meals through the week. 

  2. Add kale and protein of choice on top of sweet potato and heat in the oven or microwave. 

  3. While that is heating up combine tahini, lemon juice, and garlic. If the sauce is too thick to your liking add water 1 tsp at a time.
