Nut Free Pancakes

  • 3 eggs
  • 2 1/2 tbsp coconut oil
  • 1/4 cup coconut milk
  • 1/4 cup coconut flour
  • 1/4 tsp baking soda
  • 1/4 tsp apple cider vinegar
  1. Add apple cider vinegar to coconut milk and set aside to culture for 3 minutes. 

  2. Combine eggs, coconut oil, and coconut milk mixture. 

  3. Add in the coconut flour and baking soda until combined, do not overmix. 

  4. Heat a pan to medium heat with coconut oil spray and using a 1/4 cup measure spoon out the batter.

  5. Cook until edges are set and bubbles are in the middle.

  6. Flip and cook another 30 seconds. 

  7. Add your favorite toppings!
