Lemon Mint Mediterranean Bowl
Ingredients
  • 1 1/2 cups butter lettuce
  • 1/4 cup cucumber
  • 1/4 cup grape tomatoes
  • 1/2 avocado
  • 1/2 lemon
  • 1 tbsp olive oil
  • 4 oz protein (I used turkey meatballs)
Instructions
  1. Combine everything except the olive oil into a glass container.

  2. Use a small glass bottle, I love reusing ginger shot bottle, to carry the olive oil. 

  3. When ready to eat squeeze the lemon on top and add the olive oil.
