Healthy Burrito Bowls (Paleo, Whole 30, Keto)
  • 1 package cauliflower rice
  • 1/2 cup cilantro chopped
  • 1 tbsp avocado oil
  • 300 g chicken thighs (breast)
  • 1/2 lime
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika
  • 1 package veggies of choice (I did fajita)
Per Bowl
  • 1/4 cup butter lettuce
  • 1/2 avocado
  1. Heat a pan to medium heat with the avocado oil. 

  2. Add cauliflower rice to the pan and cook 5 minutes or until tender. Add in lime juice and cilantro. Remove from heat. 

  3. To cook the chicken add it to the pan along with the garlic powder and paprika. Cook until no longer pink, turning halfway through, about 7 minutes. Add in your veggies of choice. 

  4. Add some cauliflower rice to the bowl with veggies and add in the lettuce and avocado. 

  5. Enjoy!
