Healthy Single Serve Fruit Crisp (Paleo, Vegan)

  • 1/2 cup strawberries or other fruit of choice
  • 1/2 tsp vanilla
  • 1 tsp tapioca flour
  • 3 tbsp almond flour
  • 1 tbsp chopped nuts I did walnuts
  • 1 tsp coconut sugar or monk fruit
  • 1 tbsp coconut oil
  1. Preheat oven to 350F.

  2. Combine strawberries (or fruit of choice) with vanilla and tapioca flour.

  3. Add the fruit to an oven safe ramekin. 

  4. Combine the ingredients for the topping including almond flour, nuts, coconut sugar or monk fruit and coconut oil. 

  5. Add the topping on top of the fruit. 

  6. Bake for 25 minutes or until topping is golden and fruit is bubbling. 

  7. Allow to cool 5 minutes before enjoying.
