Salmon Goddess Salad (paleo, whole 30)

  • 2 cups mixed greens
  • 1/2 cup cucumber, ribboned or sliced
  • 1/2 avocado
  • 4 oz salmon
  • 1 tbsp cilantro
  • 1 tbsp unsweetened coconut flakes
  • 1/2 lemon
  1. Heat a pan to medium heat.

  2. Season salmon with salt and pepper and place skin side down on pan.

  3. Cook for 3 minutes. While salmon is cooking assemble your bowl with the cucumber, mixed greens, coconut flakes, avocado and cilantro.

  4. Flip the salmon over and cook for another 3 minutes.

  5. Once finished place on your salad and squeeze the juice of the lemon on top. Feel free to add a lemon tahini dressing on as well!
