Healthy Burrito Bowls are the perfect easy meal any day of the week. Plus, this is paleo, whole 30 and keto friendly! Plus, it makes a great meal prep.
What is great about these bowls is that they are so versatile. You can change up the veggies and the protein to what you like. Chicken, grass-fed beef, turkey or keep it meatless. You can also prep this all in advance to assemble quick meals throughout the week.
The cilantro lime cauliflower rice is a game changer. There is so much flavor and you don’t miss the carbs at all. It is the perfect chipotle at home remake!
Healthy Burrito Bowls (Paleo, Whole 30, Keto)
Ingredients
1 package cauliflower rice
1/2 cup cilantro chopped
1 tbsp avocado oil
300 g chicken thighs (breast)
1/2 lime
1/4 tsp garlic powder
1/4 tsp paprika
1 package veggies of choice (I did fajita)
Per Bowl
1/4 cup butter lettuce
1/2 avocado
Instructions
Heat a pan to medium heat with the avocado oil.
Add cauliflower rice to the pan and cook 5 minutes or until tender. Add in lime juice and cilantro. Remove from heat.
To cook the chicken add it to the pan along with the garlic powder and paprika. Cook until no longer pink, turning halfway through, about 7 minutes. Add in your veggies of choice.
Add some cauliflower rice to the bowl with veggies and add in the lettuce and avocado.
Enjoy!
