Pumpkin Spice Waffles (Gluten Free & Dairy Free)


Tis the season for pumpkin spice! Unfortunately, the cooler weather has come, at least where I live, and the first thing I think of is pumpkin spice. With a fall crisp in the air there is nothing like pumpkin spice waffles, especially when made with clean ingredients!

These pumpkin spice waffles taste indulgent but are guilt free. No joke, with the first bite my eyes widened and I melted, they are that good.

What you’ll need 

Oat Flour. I love using this because it is a complex carb, meaning it will break down slower and you won’t get a blood sugar spike.

Baking Powder.

Himalayan Salt. My everyday salt, full of essential minerals, helps balance your pH and electrolyte levels.

Pumpkin Spice. You can buy it, or if you want to make your own. I will leave the measurements down below!

Egg. I haven’t tried with a flax egg, if you do and it works, let me know.

Almond milk. Or any other nut milk.

Coconut oil. A great healthy fat and medium chain triglyceride that helps you burn fat.

Pumpkin Puree. Not pumpkin pie filling, pumpkin puree, only ingredient should be pumpkin.

Maple Syrup. A great way to add natural sweetness and boosts the immune system.

Vanilla Extract. Adds a great dose of flavour.

These pumpkin spice waffles made the house smell amazing, and they also freeze really well, I have some in my freezer. When I take them from the freezer I just pop them in the toaster and I am good to go!

Feel free to top them with whatever you like. I like a little bit of maple syrup, I got some fresh maple syrup from a farm I visited while at the cottage and let me just say there is a big difference between that and what you buy at the grocery store. Bananas I think would also complement it well, or a drizzle of nut butter!

Ingredients

  1. 1 cup + 2 tbsp oat flour

  2. 1/2 tbsp baking powder

  3. pinch salt

  4. 1 tsp pumpkin spice

  5. 1 egg

  6. 1/3 cup almond milk

  7. 1/4 cup pumpkin puree

  8. t tbsp maple syrup

  9. splash vanilla extract

Instructions

Combine flour, baking powder, salt and pumpkin spice in a bowl and set aside.

Combine egg, almond milk, pumpkin puree, maple syrup and vanilla extract in a separate bowl and mix well.

Add wet to dry and fold together. It will be thick!

Spoon half of the batter into your waffle maker and cook accordingly.

Top with maple syrup.

Recipe Notes

If don’t have pumpkin spice you can make your own!

- 1 tsp cinnamon

- 1/2 tsp ginger

- 1/2 tsp nutmeg

- 1/4 tsp all spice 

These are so tasty and I love the way they smell just like fall, and if you are like me you are going to want to have these stocked in the freezer all season long.
