Salmon Goddess Salad (Paleo, whole 30)

This salmon goddess salad is the perfect healthy lunch or dinner. Plus it is paleo and whole 30 approved! It is about to be your new salad staple.


Salmon salad is a classic and this one doesn’t disappoint. It is loaded with so much flavor and is full of healthy fats, fiber, and protein. Salmon is full of omega-3’s which makes it great brain food. It also has lots of healthy fats making it great for your skin and your gut. The unsweetened coconut flakes give some crunch and flavour while the avocado makes it super creamy. This salad will become a staple in your diet!




Salmon Goddess Salad (paleo, whole 30)

Servings: 1

Ingredients

  1. 2 cups mixed greens

  2. 1/2 cup cucumber, ribboned or sliced

  3. 1/2 avocado

  4. 4 oz salmon

  5. 1 tbsp cilantro

  6. 1 tbsp unsweetened coconut flakes

  7. 1/2 lemon

Instructions

Heat a pan to medium heat.

Season salmon with salt and pepper and place skin side down on pan.

Cook for 3 minutes. While salmon is cooking assemble your bowl with the cucumber, mixed greens, coconut flakes, avocado and cilantro.

Flip the salmon over and cook for another 3 minutes.

Once finished place on your salad and squeeze the juice of the lemon on top. Feel free to add a lemon tahini dressing on as well!
